The processing of wasabi
Here we introduce the production method for wasabi, using Banjo foods' “sawa-wasabi” as an example.
Wasabi preparation
STEP1 : Confirmation of raw materials (wasabi)
Freshly harvested hon-wasabi is delivered to us from our contracted farmers in Izu, a region that is renowned for its wasabi production. The newly delivered wasabi is immediately examined and then washed and drained while still fresh. First incoming inspection is conducted to ensure that safe and contaminant-free ingredients are used in wasabi preparation.
STEP2 : Confirmation of auxiliary material
We then conduct an additional inspection of the raw ingredients and perform safety and quality checks.
STEP3 : Grating and mixing processing
A skilled operator with many years of experience and technical skills is responsible for the processing of wasabi into a smoothly grated paste. Raw wasabi from other production regions are then evenly mixed with the paste using a dedicated large-scale semi-automated processing machine. We have a system that then automatically and efficiently converts the processed ingredient into a mixture that enters the filling process stage.
STEP4 : Filling
An operator, trained in packing techniques, uses BANJO FOODS' unique packaging system to inject/pack our product into containers and bags of various shapes and sizes.
STEP5 : Product inspection
The packed product then undergoes a series of examinations, which include a metal detector test to check for foreign bodies, as well as an examination for microbes and for the physical properties of the product.
STEP6 : Packing, storage, and shipping
Upon completion of these inspections, the finished product is packaged and then shipped.
